Raw Nut Pate Salad for Summer Picnics

(HealthNewsDigest.com) - Summertime means having fun, relaxing and spending less time in a hot kitchen. My raw nut pate is the perfect complement to any bar-b-q or picnic. Loaded with protein, this pate can be spread on lettuce and dressed with sliced tomatoes and carrots or used as a veggie dip. There's no cooking necessary and very little ingredients. They don't have to know it's good for them!

Raw Nut Pate (savory)

Soak 1 cup of either raw walnuts or almonds in a glass container in the refrigerator for at least 4 hours

Add the drained nuts to a food processor

Add 1 medium-sized tomato and onion to food processor

Blend mixture until fluffy

Add a few teaspoons of water if mixture appears “dry”

Add sea salt to taste

Always scrape the sides of the processor bowl to ensure complete mixing

Serve with raw or grain crackers or on a lettuce leaf wrapped w/ shredded carrots, peppers, or serve with veggies as a dip
