An excellent source of antioxidants, Vitamin C and lycopene, not to mention watermelon is naturally sweet and so juicy! Of course you can always slice it for an easy summer snack, but when you have leftover watermelon, it is a fun surprise ingredient in these delightful and oh-so-refreshing soup, salad, and slush recipes!

Even though watermelon is 92% water, it is chocked full of nutrition with fiber, vitamins A & C, potassium and antioxidants.

Mint is easy to grow, even I can do it! It spreads like wildfire, so contain in pots or it will take over.
This light salad pairs well with any entrée, especially your favorite summer grilled meats.
